Cranberry Scone


Cranberry Scone. Believe me, anyone can bake super delicious cranberries. I did most of my baking during weekends & it is meant for Saturday / Sunday afternoon tea. My family enjoy afternoon tea so much especially my kid. She loves scones with fruit jam & butter.
Hm....so rich in taste & full of flavor.

Good pastry always made of good ingredients. Get the best natural dried cranberries. I have got this pack of cranberries from Sabrina. It was from Canada & taste fantastic.


Prepare the few dry ingredients in a bowl.
Scone Recipies:
250g AP flour
60g Sugar
2.5 tsp baking powder
0.25 tsp salt
70g cold butter
60g dried dried cranberries
2 oranges peel
170 ml milk
2 oranges peel
Prepare all ingredients in advance because we need to work quickly.

Method:
Preheat oven at 200 degree C.
In a large bowl, whish together flour, sugar, b.powder & salt. Cut the cold butter into small pieces with pastry blender into the flour mixture or 2 hands. I get my daughter helps. It will became coarse crumbs. Gently stir in the cranberries & orange peel. Add milk until just combine. DO NOT over mix. Transfer to a lightly floured surface & form the dough into a patties & cut it with round shape mold. Brush with some milk. Bake for 15-20 mins until light brown.

Simple Chicken Rice

To me, simple food is the best. I got to taste the original flavor of the food.

When I cook chicken rice, I always think of my granny. That was her best dishes & come to think about it, we missed her chicken rice so much. I used to help her to de-feather the chicken. Back then in the 60s...70s....it is very common for everyone to slaughter their own chickens on festive seasons. Those old memories...maybe that's the reasons why people respect & appreciate the food which doesn't come so easy.

Ingredients: Steamed Chicken
Chicken thigh (high quality)
Ginger
Salt
Shallot (fried the shallot in vege oil)
Cucumber for garnishing
Spring onion for garnishing

Dipping sauces: soya sauces

Method:
  1. De-bone the chicken thigh. Do not cut it into pcs. Keep is as whole thigh. Only cut it when you serve.
  2. Rub it with salt & lay a few slices of ginger on the chicken before steaming.
  3. Steam the chicken accordingly. Roughly about 20mins- 30 mins depends on the amount of the chicken meat. Logically it takes longer to cook more meat. Just experiment a few times, you will know the perfect timing for the portion that you cook. Trust me, it just come naturally.
  4. When it is done, you can cut the chicken & serve it with fried shallots.
  5. To taste better, you can eat the steam chicken with soy sauces.
You can serve with steam jasmine rice. It already taste fantastic.
If you would like a better flavor rice, you can cook the jasmine white rice with chicken stocks.

Delicious Croutons for Salad

We love greens- salads. We always try to encourage our kid to eat more vegetables. Other than the regular stir fried vegetables which is so common to the Chinese. We wanted her to try something new. I want her to be more adventurous in food & yes..she love food just like we do.

Introduce the delicious homemade croutons! Surprising she love the fresh salad with the crunch.

You can use any type of bread to make croutons. However it is better to use days old bread which already dried out. It is a waste to throw it away, you can make it into croutons & keep in air tight container for soups/salads. The French are very good in maximize the use of the bread.
Personally, I prefer to use low sugar bread e.g. baguette, french country bread or sourdough.

1st step: cut all bread into small cubes.

2nd step: season it properly & bake

Toss all the cube bread with olive oil, salt, pepper, herbs (rosemary/ thyme / basil) & lots of garlic. Bake in the preheated oven @170'c for 5 mins- 10 mins. If you like it crunchier, you can bake it longer but do not burn it.

Stir Fried Rice Spagetti with Sausages


A lot of friends asked us, as a working parents, without a maid, without any helpers for the house works ; how could we manage to cook during the weekdays. Honestly, we eat home cook food 90% of the time we are at home , which is healthier- at least we use less salt & oil.
Sometimes, a simple meal is more satisfying than you think.

Simple stir fried organic rice spaghetti with sausages. This is the 1st time I am cooking the gluten free organic rice spaghetti. We are very curious if these type of rice spaghetti is as good as the durum wheat pasta. So curious to find out............the pic does look yummy?


Ingredients:
Rice spaghetti (gluten free)
Sausages ( as long as it is high quality)
Garlic (diced)
Onion (diced)
Yellow bell pepper ( tips: kid likes yellow cuz it is sweet)
Pepper & salt
0.5-1 cup Chicken stocks (real chicken stocks taste better)
Dried basil
Chili flakes (optional)

Method:
  1. Cook the rice spaghetti according to packet in instruction at the same time preparing a wok for stir fry. Must al -dente.
  2. Brown the garlic, onion, sausages & chili flakes (optional) with little oil.
  3. Add the yellow bell pepper & then add in the chicken stocks. Let it simmer a while.
  4. Immediately toss in the cooked rice spaghetti, add salt & pepper to taste. Garnish with dried basil.

I would like to share with you another tips. When cooking rice pasta, pls make sure you follow the packet instructions to rinse the pasta if necessary, otherwise, it will become mushy. Different brands behave differently.

My kid was asking a second serving for this rice pasta. Worth trying......Happy cooking...

Japanese Ume Spaghetti

We would like to introduce you something very healthy & very fast to cook. It is actually so simple that you might not believe it, see below ingredients that you need;

Pasta- spaghetti
Japanese Ume powder
Olive oil / any other plain vegetables oil
Toasted Sesame (optional)

Method:
  1. Cook the pasta according to packet instruction. Drain & set aside.
  2. 1-2 tbsp of olive oil (good quality olive oil is worth investing), 1-2 tsp of Ume powder depends on your liking. If you like sourish, you can put more.
  3. Lastly, sprinkle some toasted sesame.
  4. Toss, toss & toss. Ready to serve.
The key ingredient is actually the UME.

With reference to wiki, Umeboshi ( 梅干) are pickled ume fruits common in Japan. Ume (Prunus mume) is a species of fruit-bearing tree in the genus Prunus, which is often called a plum but is actually more closely related to the apricot. Umeboshi are a popular kind of tsukemono (pickles) and are extremely sour and salty. They are usually served as side dishes for rice or stuffed inside of rice balls (sometimes without removing their seeds inside) for breakfast and lunch. They are occasionally served boiled or seasoned for dinner.

You can use it with pasta too. It is believe to contain health properties that good for digestion, prevention of nausea, and for systemic toxicity, including hangovers. It is anti aging too.
