Squid I - Thai style & Korean style

It is Chinese New Year - Tiger year 2010. I would like to wish this blog reader Happy Chinese New Year & 恭喜发财!It has been busy for me as usual. However, I would like to share with you some awesome & yet simple recipes that you can cook for Chinese New Year.

Squid is actually very easy to cook. It can be done in just a few minutes. Just treat it like you are cooking prawns. Fresh squid taste the best! Today I am going to share with you TWO recipes.


Recipes 1: Stir fry Thai style squid

Ingrediants:

Handful of Squid - fresh & cleaned, cut into small pcs
1 tbsp Tomyam paste- stored bought, use it when you do not have time to make your own
Fresh Chili - remove the seed if it is too spicy
1pc Tomato
1pc red onion
Salt & cooking oil
1/4 cup of water
Lots of coriander
1pc Lime

Method:
1) Heat the cooking oil in a wok, then add in the tomyam paste, stir fry the squid, add in the water to cook through the squid.
2) Add the tomato, red onion & chili & salt. Cooking for 1 min.
3) Off the heat, stir in the coriander & juice the lime over the dish.

Recipes 2: Korean style squid

This dish can be served cool.

Ingrediants:
Squid (clean & seasoned with salt)
Kimchi (white cabbage)
Spring onion

Method:
1a) Healthier version- blanch the squid in hot water to cook it through. Just be careful not to overcook the squid. Overcooked squid is rubbery.
1b) Another options: To pan fry the squid in a non stick pan with little oil. Then, sliced it up.
2) Cut the kimchi & spring onion.
3) Mix it & Enjoy!
